Recipe: Cheddar Chicken Spinach Quiche

You will need:
1 ten oz. pack chopped frozen spinach
1 c. sharp shredded cheddar cheese (more or less)
1 small to medium sized onion, chopped
1/2 tsp garlic, minced
1-2 small to medium chicken breasts
4 eggs
olive oil and/or butter
salt and pepper to taste

Instructions:
1. Preheat oven to 375 degrees F. Oil pan with olive oil or butter and fry onion and garlic until the onions soften. Then stir in spinach.
2. Cut up chicken into bite sized pieces. Turn stove to medium heat and add chicken to spinach mixture. Stir often until chicken is mostly cooked. 
3. Turn off stove and mix in cheddar cheese. Add salt and pepper to taste. You may not need much salt because cheese is already pretty salty. 
4. Pour spinach mixture into baking dish. Make sure there is room in the dish for the eggs.
5. Beat eggs in a separate bowl until smooth. Pour egg mixture over spinach and let sit for 5 or 10 minutes until it begins to seep into the spinach. Bake in 375 degree F oven for about 30 minutes or until solid. Remove from oven, sprinkle some extra cheddar cheese on top and place back into over for an additional 10-15 minutes or until surface browns. 

6. Let cool. Enjoy!
